Thanks to Fightful Select (subscription required), we now know the producers behind each match:

The WWE United States Championship match between Austin Theory and John Cena was produced by Adam Pearce.

Petey Williams produced Braun Strowman & Ricochet vs. The Street Profits vs. Alpha Academy vs. The Viking Raiders.

Shane Helms was the producer of Seth Rollins vs. Logan Paul, with Fightful Select also noting that Helms has been a “big part of Logan Paul’s WWE run, preparing him for matches and producing his work.”

Damage CTRL vs. Becky Lynch, Lita, & Trish Stratus was produced by TJ Wilson.

Jamie Noble produced Rey Mysterio vs. Dominik Mysterio.

The WWE SmackDown Women’s Championship match between Charlotte Flair and Rhea Ripley was produced by Jason Jordan.

Michael Hayes produced the WWE Tag Team Championship match that closed night one between The Usos and Sami Zayn & Kevin Owens.

It was noted by Fightful Select that neither John Cena or Logan Paul were listed against a WWE brand on the production notes.

Although Fightful Select didn’t list timings, they do note that the most time had been allotted to Rey Mysterio vs Domink Mysterio, Logan Paul vs Seth Rollins and the WWE Tag Title match.

Following these matches for time allocation was Charlotte Flair vs Rhea Ripley, with Austin Theory vs John Cena.

The Men’s WrestleMania Showcase tag match was slated for the least time on the show.
